Popcorn is a whole grain food which provides energy as a complex carbohydrate. Three cups of popped corn are full of fiber and equal to one serving from the grain group. Fiber not only provides necessary dietary roughage but also slows the digestive process, making one feel full for a longer period of time. Naturally fat and sugar free, one cup of popcorn only contains 31 calories before any oil is added.
Popcorn is not only a healthy snack, but can easily be a vegan treat as well. There are plenty of ways to enjoy fresh, warm popcorn without ever adding any butter or other dairy products. Different flavors of popcorn oils provide a different style of snack, whether you want something savory with olive or vegetable oil, or a sweet treat using coconut oil. Seasoning the popcorn once it's cooked doesn't have to involve high sodium cheese salts, however popular they may be; sea salt is a great natural alternative.
Also, just because you want a vegan option doesn't mean you can't microwave your popcorn. All popcorn can be microwaved, whether purchased as kernels or in a ready packet. simply put 1/4 cup un-popped kernels in a lunch-sized brown paper bag and fold the top over. It might be a good idea to secure the opening with a few pieces of tape. Microwave for two minutes or until you hear the kernels slow to a stop. After it has cooled, you can season however you like, whether with vegan margarine, sea salt, or olive oil.
If plain popcorn isn't satisfying your snack needs, try a few of these vegan options: popcorn oat cookies or vegan peanut butter popcorn balls.
